A rich, layered tomato and pepper base built from tinned tomatoes, red and sweet pointed peppers, onion, scotch bonnet, garlic and ginger, finished with paprika, curry powder, thyme and bay. Fry it into rice and it carries the depth of a slow-built jollof base.

The Detail

Ingredients, cooking and storage

Tinned tomatoes
Ginger
Red bell peppers
Paprika
Sweet pointed peppers
Curry powder
Onions
Thyme
Vegetable oil
Bay leaves
Scotch bonnet pepper
Seasoning (contains salt)
Garlic
Stock seasoning

Heat 4 tablespoons of vegetable oil in a pot over medium heat.

Add the sauce and fry for 5–10 minutes, stirring occasionally.

Add 2 cups of rice and stir to coat evenly.

Add 2 cups of chicken or lamb stock (or water).

Cover and cook on low heat for 20–25 minutes, until tender.

Turn off the heat, rest for 5 minutes, fluff and serve.
Water can be used in place of stock, although stock is recommended for greater flavour.
Keep refrigerated. Once opened, use within 3 days.
